Bright Leaf Brunswick Stew (BBQ)

Brunswick stew is a side item often found at BBQ restaurants in the south. This recipe combines a delicious southern tradition with down east favorite Bright Leaf BBQ. It's a must-try!

Ingredients:

  • 2 Cups of Bright Leaf BBQ (shredded pork)
  • 1 Cup of Cackalacky Sauce
  • 1 Stick of Butter
  • 1 - 1/2 Cups of Chopped Onion
  • 1 Tbsp. of Garlic
  • 3 Cups of Diced Potatoes
  • 1 - 1/2 Cups of Butter Beans
  • 2 Cups of Corn
  • 5 Cups of Chicken Stock
  • 1 Can of Diced Tomatoes
  • 1/2 Cup of BBQ Sauce
  • 2 Tbsp. of Worcestershire Sauce
  • 6 oz. Texas Pete Hot Sauce
  • 2 Cups of Shredded Chicken
  • 1 Cup of Okra
  • 2 Tbsp. of Corn Starch
  • 1 Cup of Ketchup
  • 1 Can of Green Beans
  • 1 Cup of Tomato Sauce

Cooking Instructions:

  1. Turn the stove on medium heat and sauté' the onions in butter in a large pot, then add garlic and cook onions until translucent
  2. Add chicken stock, green beans, potatoes, butter beans, corn, diced tomatoes, and okra to the pot.
  3. Bring to a boil, reduce the heat and let it simmer for about 25 minutes until the vegetables are tender.
  4. Now, it's time to add more ingredients! Put in the Worcestershire and BBQ sauce, Texas Pete, ketchup and tomato sauce. Stir everything in and mix it well.
  5. Add shredded chicken and Bright Leaf BBQ to the combination by gently stirring in.
  6. Let the stew simmer uncovered for 15 - 20 minutes
  7. Enjoy!
