Bright Leaf Beer Cheese Soup (Bacon)

This beer cheese soup recipe with North Carolina hickory-smoked Bright Leaf Bacon is the ultimate comfort food that will warm you up on a cold day. Made with rich, creamy cheese and crispy bacon, it's a savory and satisfying dish for any occasion.

Ingredients:

  • (1) Pack of 12 oz. Bright Leaf Bacon
  • Diced Small Yellow Onion
  • 2 Tbsp. of Diced jalapeños
  • 2 Cloves of Garlic
  • 1 Tsp. of Thyme
  • 1 Tbsp. of Garlic Seasoning
  • 2 Cups of Chicken Broth
  • 1/2 Stick of Butter
  • 4 Tbsp of Flour
  • 1 Cup of Heavy Cream
  • 1 Cup of Smoked Gouda Cheese
  • 2 Cups of Sharp Cheddar Cheese
  • * Serve with Pretzels

Cooking Instructions:

  1. In your cast iron, fry up a pack of Bright Leaf Bacon. Dice and cook bacon until crisp. Remove bacon and put it to the side for later.
  2. Add onion, jalapeño, garlic, thyme, & garlic to the bacon grease and cook until soft.
  3. Add 1/2 of your beer of choice and simmer for about 5 minutes.
  4. Then add chicken broth and continue to simmer.
  5. While the soup is simmering, use another skillet to make a roux with the butter and flour. Stir until the roux reaches desired thickness.
  6. Add the roux to the soup and continue to simmer. Simmer and stir for a few more minutes until you like the thickness.
  7. Add the remaining beer and heavy cream.
  8. Add Gouda and Cheddar cheese, and stir until cheese melts.
  9. Best served with pretzels and topped with bacon!
  10. Enjoy!
