Bright Leaf Bologna Salad with a Twang

Y'all know and love chicken salad, but we were inspired to stir things up by swapping that chicken out for some good ol' Bright Leaf Bologna—and trust us, it's good. Slap it between some white bread or scoop it up with crackers. Go on, give it a whirl, and let us know what you think!

Ingredients:

  • (1) 16 oz. Pack of Bright Leaf Bologna (Fresh, Local Beef and Pork)
  • (1) Hard-Boiled Egg
  • 2 Tsps. of Chopped Onion
  • 1 Tbsp. of Mustard
  • 3/4 Cup of Mayonnaise
  • 2 Tsps. of Sweet Pickle Relish
  • (1) Celery Stalk

Cooking Instructions:

  1. Fill a small pot with water and bring it to a boil.
  2. Carefully add an egg to the boiling water, remove the pot from the heat, and cover it. Let the egg sit in the hot water for 10-12 minutes.
  3. After that, immediately transfer the egg to a bowl of cold water and let it cool for a few minutes.
  4. Peel the cooled egg and set it aside.
  5. Cut a whole pack of Bright Leaf Bologna into small pieces.
  6. Finely chop the boiled egg, some celery, and an onion.
  7. Place the chopped bologna, egg, celery, and onion into a food processor. Pulse the mixture a few times until it reaches your desired consistency.
  8. Mix 2 teaspoons of relish, 3/4 cup of mayonnaise, and 1 tbsp. of mustard in a separate small bowl to make the sauce.
  9. Combine the bologna mixture with the homemade sauce mixture in a large bowl.
  10. Chill the mixture in the refrigerator.
  11. Serve the chilled bologna spread on white bread or crackers.
